We bought a hog from a local farmer to be butchered. It was brought to Country Roads. The bacon and classic sausage recipe are EXCELLENT and exceeded our expectations. They were easy to work with in regards to how we wanted it all cut and packaged. We have another one going to be processed in a couple of months. They are hands down the best meat processor around. We have also bought several products from the meat case, as well as the coolers. Our family loves the jalapeño cheese meat sticks and sausage.

Butcher Shop Course 104: T‑Bone, Porterhouse, or NY Strip & Filet — What’s the Difference?We get this question every week, especially from customers ordering a quarter, half, or whole beef. So here’s a simple breakdown!
T‑Bones and Porterhouses both come from the short loin and are essentially the same steak with one key difference:
Each contains two steaks in one — the New York Strip on one side and the Tenderloin Filet on the other.
Porterhouse:
• Cut from the back of the loin
• Must have a filet measuring 1.25 inches or more
• Usually pricier because it includes a larger filet
T‑Bone:
• Cut from the front of the loin
• Filet side tapers smaller, so the filet portion is much smaller than on a Porterhouse
Important for quarter beef buyers:
You must choose bone‑in OR bone‑out.
• Bone‑in = T‑Bones/Porterhouses
• Bone‑out = NY Strips + Filets
You can’t get both from a quarter.
A half may allow some of each. A whole beef can definitely provide both.
A half typically yields 10–12 T‑Bones/Porterhouses depending on steak thickness. We cut 1" for the case, but special orders vary.
And just a reminder — T‑Bones and Ribeyes are completely different steaks from different areas.

Butcher Shop Course 102.... "Fat-Tallow-Lard, Is There a Difference?"
This week's Butcher Shop lesson will hopefully help our followers gain some insight on a VERY popular topic of today AND answer a very common question that we get often. This lesson is ALL about Fat!
We have more and more people calling the locker asking if we sell Fat, or do we sell Tallow, or when they have a beef or hog processed, they will ask, can we keep the fat, or can we keep the Tallow? So what is our answer?
First, let's give out some definitions that will hopefully clarify the differences.
Let's start with Beef Fat!
BEET FAT... is RAW fat. It has NOT been cooked or rendered. This is what we CAN keep for our customers when processing their beef or what we can keep and sell to customers from our Inspected Beef.
BEEF TALLOW... is Rendered Fat (cooked fat). We do not render Fat at our facility. This is a completely different process that requires more licensing, equipment and space.
What is the process of rendering? Melting or slow cooking Beef Fat to strain and separate the pure liquid fat from the meat scraps (cracklings).
When beef fat is rendered, it has a beefy flavor. The pure liquid fat is great for high temperature frying and currently, several restaurants and even home kitchens, are moving in the direction of using rendered beef fat for their cooking oil.
Is there a difference in any of the fat that comes off the beef? YES!
In the picture of the hanging carcass, you can see a blue box around a large amount of fat. This fat is known as the kidney or suet fat. It is very nutrient dense and it is the hardest fat on the beef. When we are asked to keep the organ fat for a customer, it is very hard to cut through. It is the best for making lotions, pastries, and candles. It is found on the inside of the carcass cavity and as you can see in the picture, it contains the kidney.
PORK FAT... is RAW fat, NOT rendered. We CAN keep this for customers who have a hog processed and we can also sell it to customers.
LARD... is Rendered (cooked) Pork Fat. Rendering the kidney fat from a hog, is the best fat for making pie crust and pastries. It has a very neutral taste and smell.
We do NOT make or sell Lard. Again, this takes more equipment, space and licensing, but if you would like to purchase pork Kidney fat, also known as "Leaf fat" we can help you with that!
So, if you are looking for the raw fat from a beef or hog and want to order several pounds so you can do the rendering at home, it is best to call ahead to place an order. This helps us to know we need to save some fat when trimming out the beef or hog.
If you have a beef or hog being processed and want us to save and package the fat, we will do this, BUT it does take extra time and more cutting and packaging. So, we will keep the 1st 20 lbs for no charge, but anything above 20 lbs we will charge $1/lb for the extra work of cutting it up and packaging.
These fats are especially popular during deer season as many people want to mix in some fat to the very lean deer meat. It is also very popular for those who have started their own business using beef tallow for skin care, lip balm and other health and beauty products.
In times past, farmers who butchered their own beef made good use of everything from the beef and the fat was very important.
We hope that this short course can help our followers to know the difference between Fat, Tallow and Lard.
Most well finished out beef and hogs will have a good layer of fat, which is good for those who want to keep it. Just before Thanksgiving we processed some American Guinea hogs, which were an old heritage breed. The farmer told us that these hogs were really raised for their fat. Some hogs had around 70+ pounds of fat, which was unheard of to us!
